So Chinese New Year ended like a week ago. The good thing about having a second new year is that you get a second chance at making resolutions you know you’re not likely to keep; such as work out more, scream at the kids less, procrastinate less and finally, start writing again. If you follow me on Instagram, you’ll recognise the pictures from last summer. I’m finally posting the recipe (2 resolutions with one post! I am on a roll!).
Satay is a guaranteed crowd pleaser. Everyone loves it and if you don’t, you need to get yourself checked (I kid!!). I pored over the internet and studied various cookbooks to find the perfect recipe. Then I realised that it’s Teriyaki Salmon all over again. There is no unanimous recipe for Satay. Everyone has their own versions – Malaysian, Singaporean, Indonesian, Thai and more – and they are all too different from one another to find common ground. So, if you can’t beat them, join them. I made up my own recipe and I’m happy to say that it’s a winner. Every time I serve it, they fly off the plate and I quietly scold myself for not having made more.

It is so very ironic that my last post was one for my blog anniversary. A post wishing myself a better (blog) year and determination for more consistent posts. That was three months ago.
My excuse? I have plenty. But let’s just settle with one ambiguos one: I’m going through…………..some stuff. It’s been going on for a while now but in the last three months, it really started to eat me up. I wasn’t even cooking much. Come mealtimes, I find myself racking my brains for the fastest and easiest, yet not altogether unhealthy (you know, cos of the kids) meals. I know! I know! The rainbow cake has been done to DEATH. But…….it’s a rainbow cake! You know you want to make one too. For a first attempt, I got to say, it turned out pretty damn good! *pat on the back* Also, I kind of made a promise here that I would. This was not baked for the same cause I promised it for though, so watch this space.
The rainbow cake has been on my to-bake list for the longest, longest time. Ever since I saw it on Sweetapolita 3 years ago. I promised myself that I will one day bake it for my daughter’s birthday and see her face when I cut out the first slice. I finally got around to it and it was totally worth the 3-year wait. Oh the satisfaction…..*blissful sigh*
